Turkey Ham Frittata

Ingredients

  • 2 cups egg whites
  • 1/2 cup almond milk
  • 1/4 tsp low-sodium salt
  • 1/4 tsp black pepper
  • Cooking spray
  • 1/2 cup diced turkey ham
  • 1/2 cup diced orange bell pepper
  • 1/2 cup thinly sliced green onions

Preparation

  1. Preheat oven to 375 F.
  2. Combine first 4 ingredients in a small bowl.
  3. Heat a medium nonstick skillet over medium-high heat. Coat pan with cooking spray.
  4. Add the ham, bell pepper, and onions; sauté 2 minutes.
  5. Stir in egg mixture. Reduce heat to medium, and cook 5 minutes, stirring occasionally for first 2 minutes.
  6. Wrap handle of pan with foil and bake for 10 minutes or until center is set.
  7. Cut frittata into 4 wedges.
