Turkey Pozole

Ingredients

  • 3 oz turkey breast
  • 1 tsp olive oil
  • 1/4 onion, chopped
  • 1 clove minced garlic
  • 1 cup chicken broth (low sodium)
  • 1/2 cup water
  • 1 pinch oregano
  • 1 pinch of salt
  • 1/2 teaspoon chili powder (or to taste)
  • 1 Poblano chili, chopped (optional)
  • 1 cup precooked corn
  • 1/2 cup cabbage

Preparation

  1. Heat oil in a saucepan over medium-high heat.
  2. Add the turkey breast and cook until it is fully cooked.
  3. Let cool and shred with a fork.
  4. Sauté cabbage, pepper, onion and garlic until transparent in the same pan for about 5 minutes.
  5. Add the shredded turkey, chicken broth, water, oregano, salt, and chili powder.
  6. Reduce heat to low, cover and cook for 30 minutes.
  7. Add the precooked corn, mix well, rectify the seasoning and serve hot.
